your question is too broad a subject. you need to be more specific in what area you are looking for explanations. Whether they be weapons, materials, armor, etc.

A good place to start reading and getting to know about the game, mechanics and ITEMS would be in the official GW wiki site - wiki.guildwars.com

As Holy Warblade say, the wiki is the place to go for the details.

Since you didn't indicate what type of item you're interested in it is a little difficult to answer your questiosn, since there are so many different types of item all with their own rules (weapons, armor, offhands, runes, insignia)

Guildwars does tend to work on the principle that there are no uber-elite items, stats-wise. For example a rare and expensive 'unique' sword that drops from only one boss monstor in the game will haver the same base statistics as a sword that can be crafted for 5 platinum in one of the cities.
'Elite' armor that can cost, for example, 75 platinum plus materials to craft a full set would have the same statistics as other sets that can be crafted for 5 platinum + materials.

What makes items special, expensive, 'Elite', or the like is not what they can do, but more down to what they look like and where they can be obtained

Well put Holly

in Guild Wars items that are "Max" either max damage weapons or max armor are all equal stats wise, it's simply the prestige of having something that is rare or very difficult to obtain that makes certain items more popular and usually much more valuable too. You can play just as well with something that costs a few platinum as something that costs 130 platinum, but your epeen will be lessened...

I'll try to answer this the best I can:
Rarity is based on two things in general: color and skin,
Weapons come in 5 different colors:
White Blue Purple Gold Green
White are common un-modded weapons and are more or less useless (merch them)
Blue are generally in the same boat, though they can be modded/inscriptable.
Purple are almost max and have ok mods, usable in early game but also tend to be merch fodder.
Gold are the rarest drop, they are almost always max and have close to perfect mods.
Greens are perfect weapons dropped by boss monsters.

Skin is what a weapon looks like, a long sword will sell for maybe 5k perfect, and obsidian blade will sell for MUCH more duw to it being a rarer "skin"

Damage is different on all weapon types and caps out fairly fast, it is very easy to get a max weapon in GW.

Mods are the different bonuses a weapon has, depending on what campaign (Factions, Proph, EotN, or Nightfall) the mods may not be changeable. in Proph/Factions weapons have an inherent mod and and a prefix/suffix if two handed/mainhand weapons (staff hammer bow sword ect.) or has set mods if offhand (shield focus). In NF all weapons are generally inscriptable, or have a change able main mod and are complete modifiable. Same with EotN.

Hope that helps

not sure exactly wut ur referring to...

but all items "work"
everything has a purpose in this game
whether its to be salvaged for crafting materials
or crafting materials themselves to make armor
or even collector items to be traded for some weapons

i guess the main categories would be:
salvage, craft, and exchange, consume, and i guess quest items

its too much to explain in detail
if u have a specific question about a specific item, then aks
otherwise jus read wiki.guildwars.com
